Berkshire Kurobuta Pork
An Elevated Pork Experience
Known for its luxurious flavor, high degree of marbling and exceptional tenderness, Berkshire Kurobuta pork has earned its reputation as the Wagyu of pork. Like beef, Berkshire Kurobuta pork is highly revered by discerning diners for its outstanding texture, flavor and juiciness, bringing an unmatched depth of flavor not found in typical pork varieties.
What is Berkshire Kurobuta Pork?
Also known as Kurobuta pork, this pork originates from the historic English county of Berkshire. The special qualities brought forth by the breed have made it among the most beloved in Japan. In fact, "Kurobuta" means "black pig" in Japanese. Despite the various names, Kurobuta pork and Berkshire pork are the same thing, both coming from the highly revered black pig.
The meat of the Berkshire pig is noticeably darker in color and has significantly more marbling than your ordinary pork. The higher fat content makes Berkshire pork well-suited to high-temperature cooking, including grilling or searing. High-quality Kurobuta pork chops can be grilled, braised or sliced thin for Japanese tonkatsu. Marinades and brines can highlight the pork's natural flavors, but they are not necessary for a luxurious eating experience.
