What is USDA Prime Beef?
The U.S. Department of Agriculture (USDA) sets forth nationally recognized, uniform standards of quality through its beef grading system, ensuring exceptional flavor and ample marbling. USDA Prime beef is the highest quality of beef graded by the USDA. The Prime shield indicates that the cut was produced from young, well-fed cattle - in our case, corn-fed American Angus cattle raised in the Midwest - with moderately abundant to abundant marbling.
