A5 Wagyu Sirloin with Bell Peppers and Green Onions

Sirloin is one of the most versatile cuts of A5 Wagyu. It has all the marbling you expect from Japanese Wagyu, but with a firmer texture than ribeye or filet, making it ideal for slicing and searing

In this preparation, we’re cutting it thin so it cooks quickly while still delivering that signature melt-in-your-mouth experience.

A5 Wagyu Sirloin with Bell Peppers & Green Onions

Ingredients

  • 6 oz A5 Wagyu sirloin

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 3–4 green onions, cut into 1-inch segments

  • 1 tsp toasted sesame oil

  • Neutral oil (such as grapeseed or canola) for searing

  • Flaky sea salt

Instructions

  1. Because A5 Wagyu cooks quickly, have all your ingredients prepped before you turn on the heat. Set everything within arm’s reach.

  2. Sear the beef. Heat a heavy-bottomed skillet or cast iron pan over medium-high heat. Add a thin layer of neutral oil. Once shimmering, sear the sirloin for 60=90 seconds. 

  3. Sauté the vegetables. In the same pan, add a bit more oil if necessary. Toss in the bell peppers and green onions. Sauté for 2–3 minutes, just until they’re slightly softened but still vibrant.

  4. Plate immediately. If you’d like, finish with a pinch of flaky salt to highlight the umami.
