- 1 tbsp mirin  

- 1 tbsp sake  

- 1 tsp sugar  

- 2 cloves garlic, minced  

- 1-inch piece of ginger, grated  

- 1 tbsp sesame oil  

- 1 tbsp neutral oil (such as avocado)

- 2 green onions, finely sliced  

- Toasted sesame seeds for garnish  


Instructions


  1. Lay a slice of A5 Wagyu chuck roll flat and place a small bundle of enoki mushrooms at one end. 

  2. Carefully roll the beef around the mushrooms, ensuring a snug wrap. Repeat with the remaining slices.  

  3. Heat neutral oil in a skillet over medium-high heat. Place the beef rolls seam-side down to help them stay intact. Sear each side until caramelized, allowing the Wagyu’s marbling to create a rich, golden crust. Remove and set aside.  

  4. In the same skillet, add sesame oil, garlic, and ginger, cooking until aromatic. Stir in soy sauce, mirin, sake, and sugar, letting the mixture simmer until slightly thickened.
